Some minced garlic takes it over the top! I love how it brings out the flavor of the tender shrimp with ease. I tend to be drawn to putting lemon with fish and shellfish, but I recently started playing around with limes too, and the flavors are also pretty darn tasty! My experiments led to this delightful Honey Lime Shrimp Skewers recipe, which y'all have to try.

- Shrimp: You'll need a pound of large shrimp, which are 26-30 a pound. You can also use extra-large or jumbo shrimp, but they will need up to a minute more to cook. For easy prep, buy ones that are already peeled and deveined. I left the tails on for the photos, but you can remove them to make them easier to eat, especially if you are serving them to kids. Don't be afraid of frozen shrimp, as most shrimp are frozen right after they are caught or harvested anyway. If your shrimp are frozen, thaw them out in the fridge overnight or put them in a ziplock bag in a colander of water. You can also leave the shell on and serve these as peel-and-eat shrimp. They cook the same way with or without the shell. You can use whatever type of shrimp you have, including pink, brown, white, rock, or royal reds. They all cook the same way.

- Lime: Fresh lime juice is a key flavor.
- Garlic: Use fresh garlic gloves.
- Olive Oil: You will need a touch of your favorite oil to help cook the skewers

Instructions:

- Mix the lime, olive oil, honey, and garlic together in a ziplock bag to make the shrimp marinade.
- Put the shrimp and the bag in and allow to marinate for 10 minutes. Don't allow it to sit too long or the shrimp will turn tough in the citrus.
- If using wooden skewers, soak them in water.
- Thread the shrimp and lime on the skewers.
- Grill for 2-3 minutes on each side! The shrimp cook quickly, so don't overcook them.
- Transfer the shrimp to a plate and squeeze on extra lime.
Life hack: If you are in a hurry, skip the skewers and just cook the shrimp in a grill pan. So SIMPLE!

Honey Lime Shrimp Skewers
Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 limes
- 2 tablespoons olive oil
- ¼ cup honey
- 2 teaspoons garlic, minced

Instructions
- In a ziplock bag mix together the juice from one of the limes, olive oil, honey, and garlic. Add the shrimp to the bag and put in the fridge for 10 minutes.
- Slice the other lime into very thin slices. Save the larger pieces at the end for the end of the recipe.
- Preheat the grill to high.
- Take the shrimp out of the bag and skewer them... alternating between shrimp and lime. Sprinkle the shrimp with salt and pepper.
- Grill the shrimp 2-3 minutes on each side until they just turn opaque and start to curl. Do not overcook!
- Squeeze any extra lime on the shrimp and serve!
